Tuna Salad Nicoise
Ingredients
- 1 lettuce, washed
- 2 eggs, hard boiled, shelled and quartered
- 225g (8oz) French beans, topped and tailed and blanched
- 225g (8oz) cherry tomatoes, halved
- 2-3 spring onions
- 1 x 185g can tuna, drained
- 1 x 50g can anchovy fillets, drained and halved lengthways
- A few black olives
Dressing
- 6 x 15ml sp (6 tbsp) olive oil
- 3 x 15ml sp (3 tbsp) white wine vinegar
- 1 x 2.5ml sp (1/2 tsp) Coleman’s Double Superfine Mustard Powder
- 1 clove of garlic, peeled and crushed
- 1 x 5ml sp (1 tsp) clear honey
- Salt and Pepper
Preparation
- Place lettuce leaves in the base of the serving dish and arrange other salad ingredients on top.
- Place dressing ingredients in a screw topped jar, adding salt and pepper to taste. Shake well to blend together.
- Sprinkle the dressing over the salad.
